Grilled Veggie Skewers
Grilled veggie skewers are a delicious and healthy way to enjoy a variety of vegetables. Here's a recipe for grilled veggie skewers:
Ingredients:
- 1 red onion, cut into 1-inch chunks
- 1 red pepper, cut into 1-inch chunks
- 1 green pepper, cut into 1-inch chunks
- 1 zucchini, cut into 1-inch chunks
- 1 yellow squash, cut into 1-inch chunks
- 1/4 cup olive oil
- 2 cloves of garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- Skewers (if using wooden skewers, soak in water for 30 minutes before using)
Instructions:
- In a mixing bowl, combine the olive oil, garlic, salt, pepper, and thyme. Mix well.
- Thread the red onion, red pepper, green pepper, zucchini, and yellow squash onto skewers, alternating between the different ingredients.
- Brush the skewers with the marinade, making sure that each skewer is well coated.
- Grill the skewers for 8-10 minutes, turning occasionally until the vegetables are slightly charred and tender.
- Let the skewers rest for a few minutes before serving.
- Serve and enjoy!
Serve as a side dish or as an appetizer.
Note: You can also add other vegetables such as mushrooms, cherry tomatoes, and eggplant to the skewers. Adjust the cooking time according to the thickness of your vegetables.
