Grilled Veggie Skewers

Grilled veggie skewers are a delicious and healthy way to enjoy a variety of vegetables. Here's a recipe for grilled veggie skewers:


  • 1 red onion, cut into 1-inch chunks
  • 1 red pepper, cut into 1-inch chunks
  • 1 green pepper, cut into 1-inch chunks
  • 1 zucchini, cut into 1-inch chunks
  • 1 yellow squash, cut into 1-inch chunks
  • 1/4 cup olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • Skewers (if using wooden skewers, soak in water for 30 minutes before using)


  1. In a mixing bowl, combine the olive oil, garlic, salt, pepper, and thyme. Mix well.
  2. Thread the red onion, red pepper, green pepper, zucchini, and yellow squash onto skewers, alternating between the different ingredients.
  3. Brush the skewers with the marinade, making sure that each skewer is well coated.
  4. Grill the skewers for 8-10 minutes, turning occasionally until the vegetables are slightly charred and tender.
  5. Let the skewers rest for a few minutes before serving.
  6. Serve and enjoy!

Serve as a side dish or as an appetizer.

Note: You can also add other vegetables such as mushrooms, cherry tomatoes, and eggplant to the skewers. Adjust the cooking time according to the thickness of your vegetables.
