Grilled Thai Coconut Chicken Skewers

Grilled Thai coconut chicken skewers are a delicious and flavorful way to enjoy grilled chicken with a Thai twist. Here's a recipe for grilled Thai coconut chicken skewers:


  • 1 pound of boneless, skinless chicken breast cut into 1-inch cubes
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 cloves of garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon red curry paste
  • 1/4 teaspoon salt
  • Skewers (if using wooden skewers, soak in water for 30 minutes before using)


  1. In a mixing bowl, combine the coconut milk, soy sauce, brown sugar, garlic, ginger, red curry paste, and salt. Mix well.
  2. Add the chicken cubes to the marinade, making sure that each cube is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
  3. Thread the chicken cubes onto skewers.
  4. Grill the chicken skewers for 8-10 minutes, turning occasionally until the internal temperature reaches 165°F.
