Cumin Lamb Skewers

Cumin Lamb Skewers, also known as "Xinjiang lamb skewers" are a popular dish from the Xinjiang region of China. They are made by marinating chunks of lamb meat in a mixture of cumin powder, chili flakes, garlic, ginger, sesame oil, soy sauce, and sugar, before grilling them on skewers.
  • 1 lb lamb leg or shoulder, cut into 1-inch cubes
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp cumin powder
  • 2 tbsp chili flakes
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • Salt and pepper to taste
  • Bamboo skewers, soaked in water for 30 minutes

Directions:

  1. In a large bowl, combine garlic, ginger, cumin powder, chili flakes, sesame oil, soy sauce, sugar, salt, and pepper.
  2. Add the lamb cubes to the bowl and toss to coat the lamb evenly with the marinade.
  3. Cover and refrigerate for at least 2 hours or overnight for best results.
  4. Thread the marinated lamb cubes onto the skewers, leaving a small space between each piece.
  5. Grill the skewers for about 4-5 minutes on each side or until cooked to your liking.
  6. Serve immediately with your favorite dipping sauce. Enjoy!
